Mommy’s Juice Friday: Raspberry Lemonade, Vodka & Spin Dip!

I’m not certain you even needed to read this post after reading the title, however, I’m glad that you did ❤ One of my all-time favorite summer drinks is raspberry lemonade with vodka. There are several ways to do this, if you’re like me and worrying about your summer waistline, then you may want to choose a Crystal Lite packet of Raspberry Lemonade, which I’ve found to be very tasty. If you prefer to stay away from artificial sweetners, then you may choose to use Simply Raspberry Lemonade (or change it up and try their Blueberry Lemonade, which is also so good!) Pick your lemonade of choice and then follow the measurements for vodka and/or coconut rum below and you’ll have your Mommy’s Juice all ready for your Friday night and you may not even have to feel bad about those calories ❤

1.5 oz of vodka

.5 oz of coconut rum (if you so choose)


Directions: (These are pretty difficult, so take your time …)

Put ice in your tall glass 🙂

Pour in vodka *(and if you want to get really crazy, add another .5 oz of cococonut rum)

Fill the rest of your glass with the lemonade, add a pretty straw and/or garnish and tadah!

As I’m sure you know, it’s Mother’s Day weekend, so this might make a nice punch to enjoy with a special mom in your life or maybe you just want a moment or two to kick back and enjoy a sweet beverage on your own. Either way, I think you’ll find this refreshing and relaxing. It’s never let me down 😉

Now, I also wanted to include a yummy but slightly healthy snack for your weekend. I decided to share my spinach dip recipe, revised for your lighter eating pleasure.


  • 4 oz reduced fat cream cheese
  • 8 oz (1 cups) lite sour cream (you could use a plain yogurt)
  • 1/4 cup of lite mayo (I like Kraft’s Olive Oil version)
  • ½ cup parmesan cheese
  • 1/2 cup skim mozzerella cheese
  • 7 oz quartered artichoke hearts, drained and coarsely chopped
  • 1tsp ground mustard
  • 1 tsp crushed red pepper
  • 10 oz frozen spinach (thawed and drained)
  • 2-3 garlic cloves
  • 1/2 small red onion chopped


Add all ingredients in a small crockpot or sauce pan, stir until melted and creamy. Serve with your choice of scooping chip and enjoy!
