I recently had a conversation with another mom who’s used the Fix to lose weight after having a baby (30 lbs!) She had never eaten in a healthy way before, she’d struggled with her weight, and then when she finally decided to change the way she was living, she could never go back. She told me she hadn’t realized how much better food that was good for you could taste. She’d never really tried eating it. Now that she’s eating clean, she can even see the difference in the way her second child eats. Her first kid likes mac n cheese (sounds like Lydia…) and her second child will try the good food that she makes, which really goes to show that our children are watching us all of the time and therefore we must set a good example for them whenever we can. This of course will include how we take care of ourselves: exercise and nutrition. What an excellent goal to have! Making a difference in your own diet in order to make a difference in your kid’s eating decisions.
It’s something to think about anyways … Lydia hasn’t been reaching for my greens yet!
I wanted to share an amazing recipe that I found in Autumn Calabrese’s FIXATE cookbook. I was so excited to get this cookbook. (I was even more excited when I found her tomato and mozzarella salad already made up for me when I went looking for the ingredients at Wegmas! But that’s another recipe…) This cook book is excellent! It’s filled with healthy recipes, pics of tasty food, easy to follow instructions, and clean ingredients! My favorite so far is: Creamy Chicken Salad Wrap! With this recipe, she includes the Container Equivalent boxes for you to see. (Each recipe does this!) It makes eating healthy even easier.
Creamy Chicken Salad and Honey Mustard Salad Dressing
(Side note: I make the dressing first 😉 )
Ingredients For Chicken Salad:
- 3 cups cooked chicken breasts, chopped (I use a cooked rotisserie chicken breast, Tops has them already off the bone!)
- 1/2 cup chopped green apple
- 1/2 cup seedless red grapes, cut in half
- 1/3 cup sliced raw almonds
- 2 green onions, sliced (I use chopped red onion instead)
- 2 Tbsp fresh, chopped tarragon (I haven’t used this … didn’t have it!)
- 1/4 cup honey dijon mustard (see recipe below)
Directions To Make the Chicken Salad
Combine chicken, apple, grapes, almonds, green onions, tarragon, and honey mustard salad dressing in a large bowl. Mix well. Refrigerate, covered, for 2 hours.
Ingredients For Honey Mustard Dressing:
- 1/2 cup reduced fat (2%) plain Greek yogurt
- 3 Tbsp Dijon mustard
- 3 Tbsp raw honey
- 3 Tbsp rice vinegar
- 1/4 cup extra virgin olive oil
Directions To Make the Honey Mustard Dressing:
Combine yogurt, mustard, honey and vinegar in a medium bowl. Mix well. Slowly add oil, whisking constantly until well blended. Season with salt if desired.
It’s so easy and so delicious. Justin approved it … Lydia asked about it, though refused to try … next time maybe! I really recommend it for an easy summer meal. We had plenty of leftovers for lunch the next day. I chose to put my salad in a whole wheat pita wrap, which will add a carb box, but it’s worth it! I add spinach into the pocket to get those extra greens.
